Chef recipes of mango desserts from HHI Kolkata

Throwing a small party in home on a Sunday but what to treat the guests with? Why not try a mango dessert recipe from Hotel Hindustan International, Kolkata? The HHI Kolkata boasts a huge list of Indian mango delicacies that their guests are served in the months of summer. The master chef of HHI Kolkata shares recipes of two mango desserts which you can try on summer evenings.

Coconut and Mango Cheese Cake

Plain sweet biscuit – 250gms

Unsalted Butter – 100gms

Cream cheese – 500gms

Sour Cream – 200gms

Brown Sugar –1/4 cup

Coconut milk – 50ml

Egg – 2nos

Egg yolk – 1no

Lemon Zest – 1tbsp

Mango chunks – 150gms

Sliced Coconut – 1/4cup (lightly toasted)

How to cook: 

Preheat oven at 150 degree Celsius.

Process biscuits until mixture resembles fine bread crumbs. Add spread. Process until just combined.

Press mixture over base side of prepared pan. Refrigerate for 20mins. Bake for 10mins. Cool.

Process cream cheese, sour cream, sugar, coconut milk, egg and egg yolk until smooth and combined.

Stir in lemon zest, chopped mango and one tbsp. of coconut.

Pour mixture over base. Bake for 40mins or until just set. Cool

Refrigerate for 4hrs or overnight.

Topped with remaining coconut and sliced mango.

Mango pesto marinated cottage cheese baked with Alphanso & gruyere

Mango (peeled and slice) – 80 gm.

Paneer (slice) – 90 gm

Mango pesto – 40 gm

Gruyere cheese – 40 gm

Mamarosa sauce – 50 gm

Mango Pesto 

Raw mango + fresh coriander + green chilli + kasundi + honey + lemon juice + salt + pepper + Tabasco sauce + brown sugar

Mamarosa Sauce

Combination with cheese sauce and tomato sauce

How to cook:

Marinate paneer with mango pesto.

Take an oven proof plate, spread mamarosa sauce and make layers with marinated paneer, mango slice and gruyere cheese.

Bake it in oven till golden grown and serve hot.
